Gluten Free Glazed Donuts

These are no superfood, and the ORAC value isn't great. They're donuts!! However, they are at least a better version of what they are, and sometimes, we just need to enjoy a donut. Gluten free, made from scratch with whole food and less refined ingredients.

And the icing is just about the yummiest thing I've had all month.


INGREDIENTS:

FOR THE DONUTS:

2 cups all-purpose gluten free flour

3/4 cup coconut sugar

2 teaspoons gluten free baking powder

1 teaspoon sea salt

3/4 milk (or canned coconut milk)

2 eggs

1 teaspoon gluten free vanilla extract

1/2 cup olive oil


FOR THE GLAZE:

1 cup powdered sugar

2 tablespoons milk or canned coconut milk


INSTRUCTIONS:

1.) Preheat oven to 425°F.

2.) Great two donut pans.

3.) In a large mixing bowl, mix all of the dry ingredients.

4.) In a separate bowl, mix all of the wet ingredients.

5.) Then, add the wet ingredients to the dry ingredients and whisk until well combined.

6.) Spoon batter into donut pan (leave space for the hole).

7.) Bake for 7-9 minutes.

8.) Remove from oven, set on cooking rack, and drizzle glaze over each.


NOTES I realized after starting these that I was out of baking powder. So, after Googling it, I used 2 teaspoons lemon juice and 1/2 teaspoon baking soda.
