The bread is grain free, gluten free and dairy free!
I toss half of this in the freezer right away or else I eat the whole loaf ;)
This is a good way to enjoy something baked and "fall flavored" without having a ton of sugar or disrupting blood sugar too much. There's even plenty of protein (especially if you top with peanut butter) to make for a good breakfast choice.
- 2.5 cups almond flour (for smoother texture use blanched)
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1 tsp baking soda
- 3 eggs
- 1/4 cup honey
- 1/2 cup full fat canned coconut milk
- 3 bananas, ripe and mashed
- 1/3 cup chopped walnuts, pumpkin seeds, pecans, etc.
1.) Preheat oven to 350 degrees F.
2.) Grease a 9 inch pie plate with coconut oil.
3.) In a large bowl, mix together dry ingredients.
4.) In a medium bowl, whisk together eggs, then add remaining wet ingredients.
5.) Stir the wet ingredients into the dry ingredients until well combined.
6.) Pour the batter into pie dish and sprinkle nuts/seeds on top.
7.) Bake until center is firm (45-60 minutes).
