Cabbage Cups

| gluten free + vegan + grain free + vegetarian |





Total Prep Time: 30 minutes

Serving Size: 4-8


Raw Ingredients:

  • 1 small head cabbage

  • 1 medium red pepper

  • 1 large carrot, julienned

  • 2-3 avocados, sliced

  • 2 medium tomatoes, sliced

  • 2 medium apples, julienned

  • 4-5 dates, pitted and chopped

  • 1/2 a bunch of scallions, chopped

  • 20 chopped walnuts (preferably soaked overnight)

  • juice of 2 limes


Sauce Ingredients:

  • 2 teaspoons Amazing Grass Superfood Powder (optional)

  • 4 tablespoons olive oil

  • 1/4 - 1/2 cup cashew butter

  • 1 tablespoon honey

  • sea salt & pepper to taste

  • ginger to taste

  • as much filtered water as needed to thin (if necessary)

  • 1 teaspoon apple cider vinegar

  • 1 cup of walnuts (or other nut of choice) that have been soaked over night

  • 1 cup fresh parsley or cilantro


Instructions:

1. Prepare raw ingredients and set aside

2. Combine the paste ingredients together in a food processor until almost smooth, set aside

3. Remove cabbage head leaves and use as cups for all raw ingredients.

4. Top cups with paste and garnish with basil, hemp seeds and fresh squeezed lime.


If you prefer sauteed veggies, by all means cook them!
