Cabbage + Mango Slaw

This is one of my all time favorite recipes. You can make enough for the whole week without worrying about it going bad. That's easy meal prep. It's also a great fiber and nutrient dense choice when you're having a sweet craving. 

You can also enjoy with apples if your prefer.

Ingredients:

1 head napa cabbage (or red cabbage as pictured here)

4 green onions

2 mangoes

1 red bell pepper

2 limes

3 tablespoons honey

1/4 cup apple cider vinegar

1/2 cup extra virgin olive oil

1 teaspoon coarse sea salt, plus more to taste 

fresh dill and/or cilantro for garnish.

Instructions:

1.) Remove and discard the cabbage cores and finely shred the leaves. Cut green onions into ribbons. Peel and slice the mangoes. Slice and deseed the bell pepper. Juice the limes.

2.) Put the honey and vinegar in a mason jar. Secure the lid and shake well. Add the oil, salt, and lime juice.

3.) Add the cabbage, green onion, mango and both kinds of peppers to the bowl and and mix well. Adjust seasoning to your taste.  Add a dash of cayenne if you like.

4.) Allow to marinate for at least 1 hour before serving.
