Oat Flour Pancakes

These babies are gluten/dairy free AND fluffy. No cardboard discs here.


Unlike almond flour or coconut flour pancakes, these guys need protein to anchor the natural sugars in the oats (so we don't end up sleepy and starving in about an hour). Top with whole fat plain yogurt - if you don't mind making this dairy free recipe full of dairy ;), raw walnuts/pumpkin seeds/hemp seeds, or top with almond butter.


Top with more plain yogurt, berries, jam or a little whipped cream.

INGREDIENTS:

1 1/4 cups oat flour*

1 large egg

1/2 cup almond milk, coconut milk or oat milk (unsweetened)

1/2 cup plain coconut yogurt

1 tsp baking powder

1 Tbl coconut sugar

2 Tbl almond oil

1/4 tsp vanilla extract

1/4 tsp sea salt


INSTRUCTIONS:

  1. Whisk together dry ingredients in a large mixing bowl.

  2. Whisk together wet ingredients in a medium mixing bowl.

  3. Fold the wet ingredients in to the dry until batter is a smooth consistency.

  4. While batter sits, heat your pan or skillet over medium heat.

  5. Add coconut oil to pan and start scooping in your batter.

  6. Enjoy these pancakes with hemp seeds, pistachios, cacao bibs, berries, and/or pomegranate seeds :)



*you can make your own oat flour by grinding old fashioned rolled oats. It changes the consistency a little bit making the pancakes more "rustic". Also, find gluten free oats/oat flour if you are gluten sensitive/celiac.
