Almond Butter Bars

These bars are full of PROTEIN, easy to TRAVEL with, and have only a few ingredients. They are also easy to MAKE AHEAD of time. Double the batch and freeze what you want to save for later.


Add almonds and dried cranberries for some sweetness.


INGREDIENTS:

- 7 large Medjool Dates, remove pits

- 5 Tbls Hot Water

- 1/2 cup Almond Butter

- 3 Tbls Raw Unfiltered Honey

- 1 tsp Vanilla Extract

- 2 cups Old Fashioned Oats (gluten free)

- 1/4 cup Chia Seeds

- 2-3 Tbl ground Pepitas (raw pumpkin seeds), Macadamia Nuts, and/or Pistachios


INSTRUCTIONS:

1.) Line a rimmed baking dish with parchment paper

2.) Place dates in a bowl with boiling hot water, and soak for at least 10 minutes.

3.) After they are done soaking, place dates into food processor with the soaking water.  Blend until it's a thick paste (it will literally be the paste to hold these bars together).

4.) Place the date paste, almond butter, honey, and vanilla into a small saucepan over medium heat, and stir well until it gets melty and well-combined.

5.) In a large bowl, combine oats, seeds, and nuts, and add date mixture until combined.

6.) Transfer mixture to lined baking dish, and pack down evenly (I ususally use a rubber spatula for this).

7.) Put into freezer until set.
