- 2-3 zucchini

- 1/2 cup walnuts, coarsely ground

- 1 cup sundried tomatoes

- 1 Tbl nutritional yeast

- 1 Tbl cold pressed, extra virgin olive oil

- 2 cloves garlic, crushed

- 4 tsp dried oregano, basil, and/or fennel

- handful of fresh basil

- 1-2 medium fresh organic tomatoes

- salt and pepper to taste


1.) Soak the sundried tomatoes in hot water for a few hours (or as long as possible).  Drain and then add olive oil.

2.) Coursely grind the walnuts in a food processor leaving them a but chunky, and set aside.

3.) Blend sundried tomatoes with nutritional yeast, garlic, herbs and basil.

4.) Add walnuts into this mixture, and blend to incorporate.  Add slowly until reaching desired consisitency, which might not include all of the walnuts.

5.) Roll into meatballs, and set aside.

6.) Using a vegetable peeler, make noodles out of the zucchini, and toss with olive oil, herbs, sea salt and pepper.
