Gluten Free Halloween Jack-O-Lantern Bites

These are terrifyingly adorable.



These are easy to make, take just a few ingredients, are fun for the whole family ANDDDDD there are no fake or refined ingredients :)

They are colored with carrot juice... seriously!


JACK O'LANTERN BITES


1.5 cups sushi rice or short grain rice

2 cups organic carrot juice

1 cup water

.5 tsp sea salt

Kalamata olives (eyes)

Green bean tips (pumpkin tops)


1.) Boil rice, carrot juice, water and salt for 15 -20 minutes or until all the liquid has been absorbed.  Let cool.

2.) Once cool, form small balls out of the rice.  If rice sticks to hands while rolling, sprinkle some water on your hands.

3.) Cut the olives in little triangles to form the eyes and mouth.  

4.) Garnish the orange balls to make your Jack O' Lanterns.
