Gazpacho Soup



When we think of summer meals, soup tends to be the last thing on our minds. Chilled soups are actually the perfect way to incorporate lots of delicious seasonal veggies into one dish! This gazpacho recipe is ideal for those hot days when we are craving something light, refreshing, and packed with nutrients - not to mention it's so EASY to make.


Pro Tip: Prevent food waste by using vegetables that are about to go bad (soups are great for this)!


Ingredients:

  • 2 cups tomato juice

  • 4 medium tomatoes, peeled and finely chopped

  • 1/2 cup chopped seeded peeled cucumber

  • 1/3 cup finely chopped onion

  • 1/4 cup olive oil

  • 1/4 cup cider vinegar

  • 1 teaspoon sugar

  • 1 garlic clove, minced

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper


Preparation:

  1. In a large bowl, combine all ingredients. Cover and refrigerate until chilled, at least 4 hours.
