
Don't get us wrong - there is a time and place for the "real deal," but these eggplant mini pizzas are the perfect way to prepare fresh summer produce, get your pizza fix without feeling sluggish, and try fun new combinations of ingredients!
Ingredients:
1 eggplant (cut into 1/2 inch slices)
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp Italian seasoning
Salt and pepper
1 cup marinara sauce
1 cup part-skim shredded mozzarella or non-dairy cheese of choice
Mix & Match:
Sliced Bell Peppers
Chicken or turkey sausage
Crumbled Tempeh
Mushrooms
Onions
Black Olives
Jalapenos
Barbecue Sauce and Chicken
Fresh Basil
Cherry Tomatoes
Parmesan
Artichoke & Feta
Preparation:
Preheat the oven to 450 degrees.
If you have time, sprinkle the sliced eggplant with salt and let sit for 15 minutes.
Brush the eggplant with olive oil on both sides and sprinkle with garlic powder, Italian seasoning, salt, and pepper.
Place in a single layer on a baking sheet and bake for 12-15 minutes until tender and beginning to brown.
Remove and spread with marinara sauce and cheese. Top with any other toppings you like. Return to oven and bake for 4-6 minutes until cheese is melted.
