
The holiday weekend is upon us, and this usually means delicious outdoor BBQs, great company, and enjoying the long summers days. Although the holidays can be an excuse to consume foods that, if eaten in excess, make us feel sluggish and uncomfortable, we always have the CHOICE to pair our favorite treats with nutrient-dense foods.
Here is a delicious plant-based burger recipe that pairs perfectly with home-cut fries, fruit salad, or roasted seasonal veggies.
Ingredients:
1 cup cooked chickpeas
1/8 cup fresh mint
1/2 clove of garlic
1/8 onion
1/2 tsp salt
1/2 tsp ground cumin
1 1/2 tsp paprika and pepper to taste
1 tbsp coconut oil
Preparation:
Finely mince the garlic, mint leaves, and onion.
Place in a large bowl, add all the ingredients except for coconut oil and using clean hands, combine the ingredients well, mashing the beans (chickpeas) so that they stick together. 3 Form mixture into patties - 1 per person.
Cook on the grill set to medium-high heat or to cook stovetop, heat oil in a skillet on high heat. For either method, cook 3 minutes on the first side. Flip and cook for 3 minutes on the other side until cooked.
Serve over a salad.
