You can have your cake and eat it too when it comes to a yummy vday treat. Try this nutrient dense pomegranate bark! Easy to make and DELISH :)
Total Time: 30 minutes + set time
Serving Size: 1 baking sheet worth of bark
1 cup organic virgin, unrefined coconut oil
1 cup organic coconut butter
1/2 cup raw cacao powder
generous sprinkle of coarse sea salt
1.) Combine coconut oil & coconut butter into saucepan and melt on low heat, stirring occasionally.
2.) Remove seeds from pomegranate and set aside.
3.) Once coconut oil & coconut butter is completely melted remove from heat and stir in raw cacao until completely smooth.
4.) Place parchment paper on an edged baking sheet, then pour chocolate coconut mixture onto sheet evenly. Distribute pomegranate seeds evenly on the 'chocolate' then sprinkle sea salt evenly as well (optional).
5.) Place in freezer on a level surface for at least 30 minutes. Crack bark over new parchment paper, careful not to burst pomegranate seeds.
