Detox Soup

This is a GREAT opportunity to use up vegetables that are about to go bad on you. Turn all your leftovers into as much soup as you can, and then you can just freeze it.  No waste :) 


Thicken it up with sweet potato and add some raw pumpkin seeds on top for crunch.

Ingredients:

- 1/2 Red Onion, chopped

- 3 cloves Garlic, minced

- 1 tbsp Coconut Oil

- 3 cups Water or Vegetable Stock

- 4 cups Vegetables, chopped (I usually use a mixture of sweet potato, celery, cauliflower, tomato, and pablano pepper)

- 1 tsp Red Pepper Flakes

- 1 tsp Black Pepper

- 1 tsp Curry Powder

- 1 tsp Chili Powder

- 1 tsp Sea Salt

- 1 cup Coconut Milk (full fat and canned)

(add some sweet potato if you like your soup thicker)


Instructions:

1.) Saute the onion and garlic in coconut oil in a large soup pot

2.) Add the water or veggie stock

3.) Stir in the veggies and spices

4.) Bring the mixture to a boil, and then turn down to low heat and simmer for 30 minutes.

5.) Stir in the coconut milk and simmer for 10 more minutes.

6.) Enjoy blended or as is!
